As a complete beginner with a Canon EOS 5d and a Nexstar 8 SE, what would you recommend my camera settings be to photo nebulae ??

Hey David,
If you're not too deep in light pollution I would recommend going for 5-6 minutes when imaging nebulae. That's what we usually did when using a DSLR camera.
